Well, Hello Spring + Beet Salad Recipe

Oh hi, spring! Though it may not feel like it, today marks the spring equinox. Spring, it’s arriving! It’s the season that represents rebirth, and so many of us feel the need to make room for this rebirth in our own lives.

Speaking of ‘rebirth,’ spring is the most perfect time of the year to cleanse. I’m going to write a longer post on why this is so. But in the meantime, check out this interview I did with the lovely Winy Bernard over at Coco&Cowe.

Last week, I had the pleasure of appearing on Leah Miller’s show on E! We were talking about my fave topic, cleansing. I shared a delicious and cleansing beet salad recipe.

Beets contain compounds called betalains, which activate your liver’s detoxification pathways. Apples contain both soluble and insoluble fibre, to help pull toxins from your digestive tract and encourage bowel movements (super important, especially during a cleanse). Greens, especially bitter ones, are very stimulating to your liver and gall bladder.

Here’s the delicious recipe:

Beet & Apple Detox Salad

Ingredients
  1. 1/2 small beet, grated
  2. 1/2 apple, sliced
  3. 1-2 big handfuls of greens (I used baby kale and arugula, but baby spinach is great too!)
  4. 1/2 lemon, juiced
  5. 1 drizzle extra virgin olive oil
  6. Sea salt and pepper to taste
  7. Optional: herb of your choice (such as dill or basil)
Instructions
  1. Layer all ingredients on a plate and top with dressing ingredients.
