Chilled Asparagus and Avocado Soup (Recipe + Health Benefits)
I made a delicious soup yesterday with asparagus I bought in Prince Edward County on the weekend. This is the time of year that I start to crave more raw soups and so I experimented with making a raw cream of asparagus soup. Read on for health benefits and the super easy recipe!
Health Benefits of This Soup
- Asparagus is high in nutrients such as vitamin K, folate, and B vitamins, to name just a few. It’s also high in antioxidant nutrients such as vitamin C, beta carotene and vitamin E. Asparagus also contains phytonutrients with anti-inflammatory benefits (quercetin, rutin, kaempferol and isorhamnetin).
- Avocado is an anti-inflammatory food thanks to its phytosterols and phytonutrients. Additionally, the fats found in avocados can also help to increase absorption of the beta carotene found in the asparagus.
- Because it’s simply a raw and blended soup, the nutrients and enzymes are retained.
Chilled Asparagus and Avocado Soup
½ bunch of fresh asparagus, tough ends broken off and stalks roughly chopped
1 small shallot, roughly chopped
½ avocado
½ a juicy lemon, juiced
2.5 cups of water
½ tsp Celtic sea salt (and more to taste)
Pepper to taste
Put all ingredients in a blender and blend on high until smooth. Add more water to desired consistency or to facilitate blending.
Makes 4 small or 2 large servings.
