Here’s one of my favourite make-at-the-beginning-of-the-week salads. It gets better as the week goes on and is full of cold-weather detox foods.
Health benefits of the Superfood Carrot, Beet and Kale Salad:
- Beets contain compounds called betalains, which activate your liver’s detoxification pathways.
- The ginger and garlic in the dressing are immune boosters and the apple cider vinegar helps to break down the fibre in the kale, allowing it to be more easily digested.
- Carrots and kale contain loads of beta carotene, which converts to Vitamin A in our bodies. Vitamin A is necessary for helping our liver in the detox process, and also for making our skin beautiful and healthy.
- Sesame seeds are an excellent source of anti-inflammatory essential fatty acids and calcium.
Superfood Carrot, Beet and Kale Salad
½ head kale
¼ cup flax oil
1/8 cup apple cider vinegar
1/8 cup gluten-free tamari or Bragg’s liquid seasoning
1 small clove garlic, minced
1.5 tsp fresh ginger, minced
Dash hot chilis and sesame oil
Wash and dry the kale.
Grate the carrot and the beet with a box grater or in the food processor.
Once the kale is dry, roughly chop into bite sized pieces and combine with the grated beet and carrot.
Add the dressing and toss to combine.
